These deeply chocolaty, moist, chewy and fudgy Salted Caramel Chip Brownies make a delicious decadent treat that will satisfy the most serious of chocolate cravings.

This recipe is perfect for serving a larger crowd or for enjoying some now and freezing the rest for later.

How to make it

This is an easy recipe using simple ingredients that are easily substituted if needed. For instance, you can make these sweet and salty caramel brownies with either natural or Dutch processed cocoa.

Though this recipe uses both brown and regular sugar, you can substitute the brown sugar for granulated sugar.

And if you really want to make these brownies but don’t have salted caramel baking chips in your pantry, you can use semisweet chocolate chips in their place. You’ll lose the sweet and salty caramelness (that’s a word right?) of this recipe but the brownies would still be scrumptious.

Ingredients Overview:

  • Unsalted butter
  • Semi-sweet chocolate chips
  • Brown sugar
  • Granulated sugar
  • Eggs
  • Pure vanilla extract
  • All-purpose flour
  • Cocoa
  • Salt
  • Sea salt caramel chips

Steps Overview:

You'll need a 13 x 9 baking tray for this brownie recipe. A tray of that size will give you at least 24 good sized portions.

Lining the pan with parchment paper and leaving an overhang on two opposite sides (longest part) will help you lift the brownies out of the pan for easy cutting.

  1. Place a rack in the centre of your oven and preheat it. Lightly grease the bottom and sides of a 13x9-inch baking pan, line it with parchment paper.
  2. In a small saucepan, melt unsalted butter and chocolate chips. Let mixture cool slightly.
  3. Combine the melted butter and chocolate mixture with brown and granulated sugars, eggs and vanilla extract. Stir well.. 
  4. Add in the flour, cocoa, salt and caramel chips. Mix with a spatula until well combined.  
  5. Spread the batter into the baking pan and bake for approximately 22 to 24 minutes. Check brownies by inserting a toothpick in the centre of the pan, there should be a few crumbs clinging to the toothpick.
  6. Remove brownies from oven and place on wire rack.  Let cool in pan before lifting out brownies and cutting. 
  7. If adding the caramel drizzle, melt sea salt caramel chips in a microwave safe bowl in 20 seconds increments at 50% power, stirring caramel in between increments. Repeat until the chips are melted.
  8. Pour the caramel into a pastry bag, or small food storage bag, cut the tip off and drizzle caramel over baked brownies.

Tip: When baking brownies make sure to check them for doneness before the indicated time. Since all ovens are different, it's best to check on them early to make sure they are done to your liking.

Serving Suggestions

Serve these brownies on their own or if you want something even more decadent you can serve them warm with a scoop of your favourite ice cream.

Storage Instructions

If you would like to freeze some of these brownies to enjoy later, you can pack them in between wax paper in a freezable container and freeze for up to 3 months. Thaw overnight in the refrigerator.

Ingredients
  

  • ¾ cup unsalted butter, melted
  • ¼ cup semi-sweet chocolate chips
  • 1 cup brown sugar packed
  • ½ cup granulated sugar
  • 3 eggs large
  • 1-½ teaspoons pure vanilla extract
  • 1 cup all-purpose flour
  • ¾ cup cocoa dutch processed or natural
  • ½ teaspoon sea salt
  • 1 cup sea salt caramel chips I used the Hershey brand

Salted Caramel Chip Drizzle

  • ½ cup salted caramel chips

Instructions
 

  • Place a rack in the centre of your oven and preheat oven to 350ºF.
  • Lightly grease the bottom and sides of a 13x9-inch baking pan, line it with parchment paper letting it hang over the two longer sides (this will make it easier to lift the brownies out of the pan, and cut them). 
  • In a small saucepan, over medium-low heat, melt unsalted butter and chocolate chips. Let cool slightly.
  • To a medium bowl, add the melted butter mixture, brown and granulated sugars, eggs and vanilla extract. Stir until combined.
  • Add the flour, cocoa, salt and caramel chips. Mix with a spatula until well combined. 
  • Spread the batter into the baking pan and bake for approximately 22 to 24 minutes. Check brownies by inserting a toothpick in the centre of the pan, there should be a few crumbs clinging to the toothpick. Because ovens vary, it's a good idea to check your brownies a couple of minutes before the indicated time to make sure you don't over bake them. 
  • Remove brownies from oven and place on wire rack.  Let cool in pan before lifting out brownies and cutting.

Salted Caramel Chip Drizzle (Optional)

  • Melt sea salt caramel chips in a microwave safe bowl in 20 seconds increments at 50% power, stirring caramel in between increments. Repeat until melted.
  • Pour the caramel into a pastry bag, cut the tip off and drizzle caramel over baked brownies.

Thank you so much Mary, I'm so glad you love these brownies! To make these into bites, I would bake the batter in mini muffin tins. Make sure you butter, spray or line the cavities. I recommend baking them at 350F and checking on them at 10 to 11 minutes to see if they're baked to your liking or need a couple more minutes, this all depends on how moist and gooey you like your brownies .

Hi, I've never tried it with this recipe myself, but it should work. The only ingredient that will be more difficult to half would be the egg. Since the recipe calls for three eggs, use one egg plus 2 tablespoons of a second egg. To measure two tablespoons of an egg, break an egg in a separate bowl, whisk it and use 2 tablespoons of it. Make sure to use a smaller baking pan if you half the recipe, 8x8 or 9x9 baking pan should work. You'll also need to pay attention to the baking time, it should take around 20 to 25 minutes, insert a toothpick to check if it's done. You'll want to take the brownies out when there's a few crumbs clinging to it. If you try it let me know how the recipe went for you. Thanks!
