Step 1: Chop dates, add a spoon of flour and toss.

Step 2: In a large bowl, add flour, cinnamon, nutmeg, baking soda and salt. Whisk to combine.

Step 3: In the bowl of a mixer, add the butter and brown sugar. Beat until fluffy.

Step 4: Add in the egg and vanilla and beat until incorporated.

Step 5: Add the flour mixture and beat.

Step 6: Add rolled oats and chopped dates, beat until combined. Refrigerate the cookie batter for 30 minutes.

Step 7: Scoop cookie dough and place two inches apart on cookie sheet.

Step 8: Bake until the cookies are golden around the edges, about 10 minutes.
