¾cupwhole oatsI used a coffee grinder to grind them slightly
½cupalmond flour or meal
1tablespoonflax mealor ground chia seeds
1tablespoonground espressoor espresso powder
1-¼teaspoonground cinnamon
½cupalmond butter
¼cuppure maple syrup
1teaspoonvanilla extract
For Coating (optional)
¼cupalmond flour
¼teaspoonground cinnamon
Instructions
In a medium bowl, add all of the dry ingredients. Stir.
Add the wet ingredients to the dry and stir until the ingredients are well combined.
Using a small cookie scoop or a small spoon, scoop mixture into even sized portions. Using your hands, roll each portion into a smooth ball. Repeat this process with the entire mixture, you should get about 22 energy bites.
If desired you can roll the bites in a mixture of almond flour and ground cinnamon.
When done rolling, arrange bites on a lined baking sheet. Place in freezer for about 20 minutes before removing and storing in an airtight container. Bites can be kept in the refrigerator or freezer.
Notes
The energy balls can be rolled in dried coconut, finely chopped peanuts or any other nut of your choice.
