The combination of flavours and textures packed in this easy cabbage salad recipe will have you craving this Asian Salad with Peanut Dressing time and time again!
1teaspoonSriracha hot sauceYou can double the amount of Sriracha if you like spicy food.
¼cuproughly chopped peanuts
¼cupchopped cilantro
⅓cupwatermore for a thinner dressing
Instructions
Prepare the salad ingredients by rinsing the vegetables.
Peel and grate the carrots and chop the remainder of the vegetables.
Add all of the vegetables to a large bowl.
Roughly chop peanuts and reserve in small bowl on the side.
In the blender or food processor, add all of the dressing ingredients and process until all ingredients are well blended and dressing is smooth.
When ready to serve add the desired amount of dressing on the salad and toss to combine. Top with reserved chopped peanuts.
Notes
If you prefer to use a natural sweetener in the salad dressing, you can use 2 tablespoons of honey or maple syrup in place of the brown sugar.
You will need to thin out the dressing with a bit of water after it has been refrigerated. Just add a few drops of water at a time and stir until you reach the desired consistency.
