How to Make them

This is an easy recipe for curry cashews made with simple ingredients. Here is an overview of the ingredients and instructions to make them. Please see the full recipe in the card at the end of the post.

Ingredients Overview

  • Raw cashews: I like to use whole cashews, it's ok if there are some broken pieces.
  • Pure maple syrup
  • Olive oil
  • Curry powder
  • Sea salt
  • Ground cumin
  • Ground coriander
  • Cayenne pepper

Steps Overview

  1. Preheat the oven with a rack placed in the middle of it. Line a baking tray with parchment paper. In a large bowl, add the maple syrup, olive oil, spices and salt, whisk to combine.
  1. Add cashew nuts to curry mixture and toss to coat the cashews with the spice mix. 
  1. Spread the cashews in an even layer on the rimmed baking sheet. Roast nuts in the oven for 10 minutes, stir the nuts, making sure they're still in a single layer and return to the oven. Roast for an additional 10 minutes until the cashews are golden brown. Remove the tray from oven and let the nuts cool on the baking tray.

Storage Instructions

To keep the curried cashews fresh, store in an airtight container such as a mason or glass jar in a cool and dry place.

Serving Suggestions

Serve these curried cashews as an appetizer or enjoy them as a snack. These spiced cashew are also great for topping salads.

Ingredients

  • 3 Tablespoons pure maple syrup

Lebanese Cucumber Yogurt Salad (Khyar Bi Laban)

This Lebanese Cucumber Yogurt Salad is a refreshing summer dish perfect for serving on hot days.

Made with simple ingredients, this cucumber and yogurt salad comes together in no time and can be served as an appetizer, a light meal with pita bread or a side dish along grilled meats such as these Kafta Kebabs or these Chicken Shawarma Kebabs.

This fresh cucumber yogurt salad is very common in the Middle-East and is a healthy, gluten-free and vegetarian favorite.

This flavorful dish is similar to Greek tzatziki, but is thought of as a salad rather than a dip. In fact, variations of this dish featuring different herbs and spices exist in different regions of the world.

How to Make it

If you enjoy making Middle-Eastern food recipes, you'll be happy to know that making a large bowl of this cucumber yogurt with mint salad couldn't be easier.

All you need are a handful of ingredients to make this salad and it's a great way to use up cucumbers from your garden. Here's an overview of the required ingredients. Amounts needed are in the recipe card at the end of this post.

Ingredients Overview:

  • Lebanese cucumbers, also known as Persian cucumbers and mini cucumbers. You can also use an English cucumber but it will need to be peeled and deseeded. Using fresh, crunchy cucumbers will ensure a fresh tasting salad with lots of crunch!
  • Yogurt - You'll need plain yogurt for this recipe. My favorite store bought yogurt is the Balkan kind.
  • Garlic clove - You'll need one medium-sized fresh garlic clove.
  • Dried mint
  • Salt
  • Fresh mint - A little bit goes a long way and if you don't have it, the salad can be made with dried mint only.
Ingredients needed to make a Lebanese Cucumber Yogurt Salad.

Steps Overview:

  1. Start by washing and chopping the cucumbers into a medium sized dice or to your liking and set them aside.
  2. Make the garlic paste by crushing the garlic with the salt. I like to do this using a mortar and pestle.
  3. In a large salad bowl add the yogurt and whisk it until smooth.
  4. Add in the garlic paste and dried mint and whisk thoroughly until combined.
  5. Add the chopped cucumbers to the yogurt mixture and combine well.
  6. If using a very thick or creamy yogurt you may need to add a bit of water to thin the yogurt dressing. About a ¼ cup of water should be enough if you're using a Balkan-style yogurt, you may need a little more if using a Greek-style yogurt.
  7. Top with chopped fresh mint right before serving. This salad is best enjoyed within a couple of hours of making it.

Tips: If using a cucumber with a thicker skin make sure to peel it before chopping it. If the cucumber has bigs seeds, it's best to remove the seedy section of the cucumber or the salad will become too watery. Removing the seeds can be easily done by slicing the cucumber in half lengthwise and running a spoon down the length of it to scoop out the seeds.

Serving Suggestions

Perfect for family dinners, this Lebanese Cucumber Yogurt Salad is delicious served on a hot summer day. It's a great accompaniment to grilled beef and chicken or spicy dishes. Serve it as a side salad in small bowls. This salad can also be eaten with fresh pita bread.

Storing Instructions

Because of the water content in cucumbers, the yogurt sauce in this salad gets watered down if it sits for too long. Therefore, it's best enjoyed fresh.

This can be easily done by slicing the cucumber in half lengthwise and running a spoon down the length of it to scoop out the seeds. 
  2. If using a very thick or creamy yogurt you may need to add a bit of water to thin the yogurt dressing. About a ¼ cup of water should be enough if you're using a Balkan-style yogurt, you may need a little more if using a Greek-style yogurt.
  3. If not serving immediately place the salad in refrigerator until ready to serve. Salad is best if served within a couple of hours of preparing.

This Gingerbread Bundt Cake smells just like Christmas. Spiced with cinnamon, ginger, cloves and nutmeg, it's the perfect cake for celebrating the holidays.

The holidays are fast approaching and one of my favourite recipes to make during the holiday season is this Gingerbread Bundt Cake.

Made with molasses and fragrant spices such as cinnamon, ginger, cloves and nutmeg, it's a classic gingerbread cake with a twist. The espresso added to this cake gives it an even greater depth of flavour and reminds me of a gingerbread flavoured coffee drink.

This easy and healthy recipe for an authentic Lebanese Tabbouleh salad can be served on its own as a light meal or enjoyed as a side dish with grilled meats and fish.

Tabbouleh, also commonly spelled Tabouli, is a classic Lebanese vegetarian dish. It's often served in the Middle East as a side salad or as part of mezze (small dishes served as appetizers).

An authentic Tabbouleh salad recipe's main ingredients are fresh parsley, fine bulgur, fresh ripe tomatoes, scallions and mint. Differences in spices used are found depending on which region in Lebanon you are from.

For instance, many will add a pinch of cinnamon or a seven-spice blend. My Lebanese family uses salt, black pepper and a pinch of cayenne. Tabbouleh is dressed with a simple vinaigrette made with extra-virgin olive oil and freshly squeezed lemon juice.

Asparagus tastes best and is most tender when it's fresh. And since it loses its flavour and nutritional benefits quickly after it's picked, it's best to buy local asparagus when possible.
